This week’s frugal recipe that I am sharing, I call Leftover Casserole.
I call this Leftover Meat Casserole because I use about any leftover meat to make it. It doesn’t matter what type of meat I put in it, everyone loves it! In the photos below it’s made with chicken. The chicken wasn’t leftover, but bought intentionally for the casserole. It’s usually turkey or ham that I use from leftovers. 🙂
Ingredients:
Any type of pasta
any leftover meats (ham, chicken, turkey, etc)
veggie, canned or frozen, if desired (our favorite is broccoli or the California Mix of frozen veggies)
shredded cheese
white, or cheese sauce
White sauce recipe:
1/4 cup margarine or butter
1/4 cup flour
2 cups of milk
Melt the margarine in a small saucepan. Gradually add the flour and mix until smooth. Pour in the milk a little at a time to keep it smooth. On low heat, continue to stir the sauce until it starts to thicken. If you choose to, add shredded cheese to your liking.
Casserole:
Cook your choice of pasta according to the package directions.
Layer the meat and pasta in a baking dish—-also the veggies if you are putting them in.
Pour the white/cheese sauce over the top. Mix just a bit to get the sauce on everything.
Add shredded cheese on the top.
Bake in a 350 degree oven for about 30 minutes or until the cheese on top is how you like it.
Eat and savor the flavor!
